Jubilee Jackfruit Sandwich Fit for Our Queen: 70 Year Update on Coronation Chicken for #BritishSandwichWeek

Award-winning vegan sandwich maker creates new vegan alternative just in time for the Queen’s Jubilee celebrations!

Coronation chicken, the iconic dish invented for the Queen’s Coronation has been given a makeover by one of the UK’s leading vegan chefs and sandwich designers, bringing
it right up to date in time for the Queen’s Platinum Jubilee.

In partnership with #britishsandwichweek (22nd
– 28th May), award-winning vegan chef
Tony Bishop-Weston, author of the Vegan Cookbook and environmental diet campaigner, has put together the mouth-watering
Jubilee Jalfrezi Jackfruit sandwich. And it’s going down a storm.

Talking through the reasoning behind his 2022 overhaul of Coronation Chicken, and the decisions behind his Jubilee Jalfrezi Jackfruit sandwich ingredients, Tony said:

“Tastes have changed dramatically since this classic dish was invented, so I wanted to give it an update that brings it right into the 21st
century, ready for the Platinum Jubilee. I have met the Queen, I actually got engaged to my wife at the Queen’s golden Jubilee garden party at Buckingham Palace, so I have a vested interest in royal celebrations. It seemed fitting to create this tribute to
our monarch 20 years on from that occasion and 70 years from her taking to the throne.

“Obviously, we wanted to keep the essence of the dish, so it still brings in those Asian influences with the curry paste, but we’ve given it more of a kick by choosing
Jalfrezi – a hotter and bolder flavour more suited to today’s palate.

“Of course, it had to be vegan, to tie in with my own ethos but also to meet the demand of the growing vegan movement here in the UK. Recent surveys show that
thirty-six per cent of UK adults believe eating a vegan or plant-based diet is “an admirable thing to do. I couldn’t agree more.

“So, we’ve replaced chicken with jackfruit, first marinating it in Marmite for that umami-rich flavour and then air frying or roasting. Marmite is also reportedly a favourite
of the Queen, who is said to enjoy her mushrooms marinated in Marmite – gaining this ingredient the royal seal of approval.

“Then it’s just a matter of layering up the ingredients on some good quality sourdough – we chose Bertinet Bakery Seeded Sourdough, which is an authentic sourdough, made
from three simple ingredients for a unique texture and delicious taste. It contains no artificial, preservatives or additives. Sourdough is much better for the gut than traditional white bread thanks to the fermentation process, hence its growing popularity.”

How to make the Jubilee Jalfrezi Jackfruit Sandwich:

For the jackfruit (makes two sandwiches):

300g tin (drained weight) green Jackfruit
1tsp rapeseed oil
1 tsp Marmite / yeast extract
1 tsp wicked/ vegan/ dairy free chicken seasoning

Stir together and bake / roast in an air fryer or fan oven 200 15 mins

For Jalfrezi stir fry:

2 heaped teaspoon (Patak’s) Jalfrezi curry paste
80 g peas
Tsp tomato paste
Heaped Tsp oat creme fraiche (Oatly)

Mix together and stir fry until peas cooked

15g vegan mayonnaise
4 slices sourdough bread

Assemble the sandwich:

Two slices seeded sourdough
Spread a heaped teaspoon of mayonnaise on one slice
Add 1/2 roasted jackfruit on the other slice add one heaped tablespoon of Jalfrezi pea curry
Add lettuce and watercress and slam the sandwich together (with ingredients on inside)

Serve with mango chutney and a cup of earl grey tea

Jim Winship, director of the British Sandwich and Food to Go Association, the membership body behind British Sandwich Week said:

“Nearly half of all new products (48%) in the sandwich / food to go sector are vegan. There has been a massive increase in demand for vegan products in recent years due
to concerns about health and the environment and a host of other factors.
