Devil’s Botany Announces Limited Release of Bourbon Barrel-Aged Absinthe
Devil’s Botany Bourbon Barrel Aged Absinthe (50% ABV, 70CL, £89.95) is an indulgent sipping absinthe that is part of the distillery’s Mettlesome Libations range.
The Devil’s Botany Mettlesome Libations range is a series of limited releases that experiments with different flavour pairings and production methods within the absinthe category. Absinthe has been tied down by the misconceptions of its past for far too long. We are excited to shift the conversation towards the future of absinthe as a botanical spirit that embraces experimentation and innovation. The special release absinthe is first copper-pot distilled with a blend of aromatic botanicals, including green anise, fennel seed, grand wormwood, southernwood, blackberry leaf & devil’s claw root. The absinthe is then aged for 12 months in a single 15 gallon ex-Bourbon barrel, yielding a very limited 75 bottles.
Devil’s Botany Bourbon Barrel Aged Absinthe was created to experiment with the use of oak barrels to enhance the distillate’s smooth texture and reveal new layers of a flavour and character. By ageing the liquid in a first fill ex-Bourbon barrel, absinthe’s spices are complemented by the sweet notes commonly found in Bourbon such as vanilla, caramel, toasted oak and dark fruits.
