The Essence of Comté: A Harmonious Relationship with Nature
The heart of Comté’s creation lies in its close relationship with the land, the farmers, and the Montbéliarde and French Simmental cows that graze in the lush, natural pastures of the Jura Massif. Each cow enjoys a minimum of 1.3 hectares[JR2] of land each, feeding on an array of fresh grasses, plants, and flowers in the summer, with locally harvested hay in the winter. The high-quality raw milk they produce is the key ingredient in Comté’s distinctive taste.

Crafted in over 140 small village dairies, known as fruitières, the fresh milk is transformed into large 40kg wheels of cheese, which are then carefully aged by skilled affineurs (cheese-masters) in local cellars. The cheese undergoes regular turning, salting, and rubbing with brine, maturing for anywhere from 4 to 24+ months. Each wheel of Comté develops its own unique profile, whether firmer and nuttier or smoother and more floral, depending on factors like altitude, time of year, and the expert touch of the affineur. No two wheels of Comté are alike, which means every slice is a discovery.

For over a millennium, the farmers, fruitières, and affineurs of the Jura Massif have cultivated a true co-operative approach to cheese-making, preserving artisanal methods passed down through generations.
